The six-course exchange menu, priced at 4200++ baht, featured an array of dishes that beautifully blended Thai and Nordic elements:

  • Thai Eel and Nordic Flavors: Thai eel paired with brown butter emulsion and toasted brioche, highlighting a perfect balance between rich Nordic flavors and delicate Thai textures.
  • Innovative Seafood Creations: A black ink tart filled with uni and crab curry, adorned with a touch of curry powder, showcased the seamless integration of bold Thai flavors with the luxuriousness of Nordic seafood.
  • Fusion at Its Best: Chawanmushi with lightly grilled dry fish and tiny shrimps, complemented by pak ka yang oil, illustrated a fusion of Thai, Japanese, and Western elements, creating a complex flavor profile.
  • Nordic Nam Jim with Scallop & Toad: This dish brought a surprising twist with Nordic-style sauce and galangal remoulade, enhancing the succulence of scallop and the unique texture of toad.
  • Exquisite Meat Pairings: Charcoaled venison served with Jerusalem artichoke purée and a Nordic twist on som tam using rhubarb, set a new standard for meat dishes.
